Cheesy, gooey and savory in the best ways, spinach is added to my basic bacon, mushroom and onion mix (with a 'secret' sauce) for a mouth-watering baked rice.
Turn on oven function to broiler, and allow to preheat while preparing rice.
In a medium to large pan or wok, fry BMO mix with rice, olive oil and frozen spinach over high heat until heated through. Approximately 3-5 minutes.
Mix ketchup with water in a bowl, and add to rice. Stir to combine thoroughly.
Taste and season as necessary with salt and black pepper.
Transfer rice mixture to a baking dish and cover generously with cheese.
Broil in oven, until cheese is completely melted and browned to liking. Approximately 8-10 minutes.
Serve and enjoy!
