Bacon and Mushrooms with Poached Egg on Toast

A savory trio of Bacon, Mushrooms, and Onions with a Poached Egg on top of toasted country bread, with a gooey poached egg that is its own sauce.

  • 3 tbsp BMO mix refer to Bacon, Mushroom and Onion Mix Recipe
  • 1 whole egg poached
  • 1 tsp italian or english parsley washed and chopped
  • 1 slice crusty bread thick sliced, country or sourdough preferred
  • salt and black pepper season to taste
  • 1 tbsp olive oil extra virgin
  1. If using oven to toast bread, preheat oven to 350 degrees F/ 180 degrees C. Place bread in oven, and toast for 10 minutes until crisp and browned on the outside.

  2. In a small frying pan, reheat BMO mix.

  3. In a separate pot with simmering water, cook poached egg according to instructions in link video above.

  4. To serve, place toast on a serving plate, drizzle with olive oil. Layer BMO mix on top of bread, followed by poached egg on top.

  5. Season with additional salt and pepper as required, and garnish with parsley.
