Grilled Citrus Cooler

A refreshing summer drink with grilled oranges and grapefruits for a summery twist!

  • 4 medium-large naval oranges peels partially removed and sliced across into segments
  • 1 large grapefruit peels partially removed and sliced across into segments
  • 3 handfuls mint leaves washed and chopped
  • 1/2 cup water
  • 2 tbsp honey
  • 1/4 tsp salt
  • 500 ml sparkling water
  • 2 tbsp castor sugar optional
  1. In a large non-stick pan, sear or grill the orange and grapefruit slices over medium-high heat until slices are nicely browned on each side.

  2. When it looks like the pan is getting too brown, add a few tablespoons of water to deglaze, scrape off the bits and pour off into bowl for later.

  3. In a mixing bowl use a wooden spoon to muddle the mint and grilled citrus with salt. Focus on crushing the flesh, not the skin as crushing the skin will make the drink more bitter.

  4. Add deglazed water, and pass through a sieve to obtain drink mix. Combine drink mix with honey to form the base concentrate.

  5. To serve, mix base concentrate with sparkling water, and serve with lots of ice, slices of citrus peel and more fresh mint.

  6. If desired reserve one slice of grilled citrus and 2 tbsp castor sugar in another bowl. Squeeze citrus slice over the rim of your drinking glass, then dip the rim of your glass into sugar to form a sugar rim around your drinking glass.
